Eat
Eat in Centro Storico for the most atmospheric dinner: its limestone lanes and lived-in bars suit a slow passeggiata, even if choice is modest rather than destination-restaurant deep. Piazza Garibaldi and the commercial center are the more practical food zone for cafés, provisions and everyday local life; rural contrade are for cooking at your accommodation or driving back into town, not walking to dinner.
Fresh local dairy: seek mozzarella and other cow’s-milk cheeses from the dairy-country around Noci and nearby Gioia del Colle; buy them fresh and eat them simply, rather than expecting elaborate plating. · Orecchiette and other Apulian pasta, especially with tomato, seasonal vegetables, legumes or bitter greens. This is inland home-style cooking, at its best when it is unfussy. · Apulian grilled and roast meats, including small offal-based rolls and lamb or pork preparations when available. Ask what is local and in season rather than assuming every menu is built around one famous Valle d’Itria specialty. · A proper local lunch followed by an evening aperitivo and passeggiata is more in keeping with Noci than trying to turn the town into a late-night dining destination. · Local bread, olive oil, vegetables and preserves are worth treating as a meal in themselves—particularly useful if staying in a self-catering rural trullo or farmhouse.
